
This Easy Burrito Casserole is a simple and delicious dish perfect for a weeknight meal. It combines the flavors of traditional burritos in a convenient casserole format, making it easy to serve and enjoy.

Instructions:
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef and finely chopped onion until the beef is cooked through, about 5-6 minutes. Drain any excess fat.
- Add the taco seasoning packet, water, and drained and rinsed black beans to the skillet. Simmer for about 2 minutes, or until the sauce has thickened slightly.
- In a separate bowl, mix together the diced tomatoes with green chiles and the sour cream.
- Spray an 8-inch baking pan with nonstick cooking spray. Place one of the flour tortillas in the bottom of the pan.
- Layer half of the beef mixture over the tortilla, followed by half of the tomato-sour cream sauce, and then one-third of the shredded Mexican cheese blend.
- Repeat the layers, starting with another tortilla, the remaining beef mixture, the remaining sauce, and another one-third of the cheese.
- Top with the final third of the cheese.
- Cover the baking pan with foil and bake for 30-40 minutes, or until the casserole is hot and bubbly.
- Remove the foil and bake for an additional 5 minutes, or until the cheese is lightly browned.
- Let the casserole stand for 5 minutes before serving.
- Top with your desired toppings, such as extra sour cream, guacamole, or salsa.
