This Easy Burrito Casserole is a simple and delicious dish perfect for a weeknight meal. It combines the flavors of traditional burritos in a convenient casserole format, making it easy to serve and enjoy.

Ingredients:

8-inch flour tortillas3
Lean ground beef1 pound
Onion, finely chopped1/2
Taco seasoning packet1 packet
Water1/2 cup
Black beans, drained and rinsed15 oz can
Diced tomatoes with green chiles10 oz can
Sour cream1/2 cup
Shredded Mexican cheese blend2 cups

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef and finely chopped onion until the beef is cooked through, about 5-6 minutes. Drain any excess fat.
  3. Add the taco seasoning packet, water, and drained and rinsed black beans to the skillet. Simmer for about 2 minutes, or until the sauce has thickened slightly.
  4. In a separate bowl, mix together the diced tomatoes with green chiles and the sour cream.
  5. Spray an 8-inch baking pan with nonstick cooking spray. Place one of the flour tortillas in the bottom of the pan.
  6. Layer half of the beef mixture over the tortilla, followed by half of the tomato-sour cream sauce, and then one-third of the shredded Mexican cheese blend.
  7. Repeat the layers, starting with another tortilla, the remaining beef mixture, the remaining sauce, and another one-third of the cheese.
  8. Top with the final third of the cheese.
  9. Cover the baking pan with foil and bake for 30-40 minutes, or until the casserole is hot and bubbly.
  10. Remove the foil and bake for an additional 5 minutes, or until the cheese is lightly browned.
  11. Let the casserole stand for 5 minutes before serving.
  12. Top with your desired toppings, such as extra sour cream, guacamole, or salsa.
